I am SO excited to see my parents in just TWO DAYS! In preparation for beautiful New Mexico, I made a yummy dinner with most of my New Mexico favorites and it was so good, I thought I'd post about it and make y'all a little jealous. ;)
Home-made sopapillas
Tacos a la Idaho (which means ELK meet!)
Home-fried tortilla chips.
Felt super nasty a few hours later, thanks to all the fried food, but it was totally worth it.

i would love to make sopapillas but i'm totally intimated by them. are they hard to make?!
